extra virgin olive oil, for frying, plus extra for seasoning
5 small zucchini, thinly sliced
a small bunch fresh mint leaves, chopped
2 garlic cloves, quartered
a splash white wine vinegar
salt to season
To start your Zucchine alla Scapece:
Heat up extra virgin olive oil in a deep pan for frying.
Gently place the zucchini in hot oil and fry until golden.
Place zucchini on an absorbent paper towel to drain excess oil. Allow to cool.
Place fried zucchini, mint leaves and garlic into a bowl. Season with fresh extra virgin olive oil, white wine vinegar and salt.
