Fagiolini in UmidoPrint This
- 1/4 cup extra virgin olive oil (59ml)
- 1 onion, chopped
- a pinch dried chili pepper, crushed (optional)
- 2 cups plum tomatoes, crushed (500ml)
- salt to taste
- 1 1/4 lb string beans, tips trimmed (571g)
Heat up olive oil in a saucepan. Add onions and chili pepper and stir. Cook until onions are translucent and soft. Then add the tomatoes and salt. With the back of a wooden spoon, break up the tomatoes into little chunks. Add the string beans to the pan, cover with lid and let simmer for 20 minutes. Serve hot or at room temperature.
This dish is great because you can give it so many different spins - try adding some potatoes when cooking the beans, or serving it with a squeeze of lemon juice, or topped with a dollop of plain yogurt or cucumber laban and chopped basil and mint.
