Lemon Granita

- 3 large lemons
- 1 cup still water
- 1/3 cup superfine granulated sugar
- Rind of 1 lemon, chopped
Instructions
In saucepan heat water and sugar, stirring until sugar is dissolved. Let cool.
Add rinds and lemon juice. Taste it and make adjustments as necessary.
Freeze lemon mixture in a metal bowl, stirring every 20 minutes for 3-4 hours or until liquid has become granular but is still slightly slushy
Serve granita immediately.
