A go-to meal that I often make when I don’t have a lot of time to cook is this Tuna and white bean salad – healthy, delicious and filling.
White Bean and Tuna SaladPrint This
- 1-2 cans of good quality tuna
- 1 can Cannellini beans (or any other cooked bean), rinsed
- 1 cup celery, chopped
- lemon juice, QB
- salt, QB
- pepper, QB
- olive oil, QB
- chopped basil, QB
Rinse the beans well, then add to a large bowl. Throw in the chopped celery, strain the tuna and add that to the bowl and mix well. Season with olive oil, salt, pepper and lemon juice to taste. Finish with chopped fresh basil and serve immediately.
